Funfetti cupcakes are one of my favourite things to make and they are so simple as well. If you don’t know what funfetti is basically it is a vanilla cupcake with colourful melted sprinkles inside that makes it look super fun and bright. These are perfect for parties but I also love making them at Christmas time as the pops of colour kind of remind me of Christmas lights as well. For the cupcakes I used this simple vanilla cupcake recipe and just added regular rainbow sprinkles. Topped with buttercream and rainbow sprinkles this little treat it bright and delicious.
- 175 g self-raising flour
- 175 g caster sugar
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 3 large eggs
- 140g butter, softened
- 280g icing sugar
- 1-2 tbsp milk
- Rainbow Sprinkles
1) Preheat your oven to 180C/Gas 4 and line a muffin tin with paper muffin cases.
2) Put all of your cake ingredients in a large bowl and use an electric hand whisk to beat it until smooth and creamy. Divide your mix between the cases evenly and bake for 20-15 minutes in the oven or until the cakes have risen well and are springy to the touch. Transfer the cakes to a wire rack until completely cool.
3) To make the buttercream beat together icing sugar and butter and slowly add the milk until you get your desired consistency. Beat in the vanilla extract. Fill a piping bag with the buttercream and use a large star nozzle to pipe of vanilla swirls. Top with sprinkles, serve, eat and enjoy!
